Lemon cookie energy bites

IT HAS BEEN A MINUTE. And that’s on me. I was working to revamp my tiny apartment, since I hit a point where I just could not live in the clutter anymore (and I remote work at home too, so yeah… I had myself a spiral for a second).
Anyways, I redid a wall in my apartment that has the TV hung up. Perhaps we'll post it, we shall see.
Okay, back to business. Lemon cookie energy bites, people. A quick little snack I eat before a morning run. Or honestly, at any hour.

And in the summertime, they somehow taste refreshing for an energy ball, thanks to that light lemon flavor. ALSO—it’s a 10-minute recipe. And who doesn’t love that?

Ingredients (Makes ~30 energy ball cookies)
6 tbsp sliced almonds
1.5 cups packed Medjool dates (make sure they’re pitted, or remove the pits if they still have them)
3 tbsp fresh lemon juice
6 tsp lemon zest
1.5 tsp vanilla extract
Pinch of sea salt
¾ cup shredded coconut, plus more for coating
1.5 tbsp chia seeds or flax seeds (or a mix of both)
3.5 cups old-fashioned oats
⅜ tsp ground ginger
3 tbsp brown sugar
Directions
MIX it all up! Really get into the dates. I usually start with a spoon and then use my hands to make sure it all comes together with a good consistency. (Like the pic below)
