Winter Spiced Energy Bites

Winter is just the hardest time to want to eat healthy. I think it’s because it’s so cold — and I absolutely hate that — so I need to find joy in other places. Food is an easy place to depend on. And coming off the holiday season, it’s weird not to be eating all the holiday cookies that are everywhere (I miss that).


So this is my snack that still gives me the winter spice I’m craving. I find myself eating a few before I leave for the gym in the morning. Healthy cookie-like bites to start my day? Yes, please — sign me up.




Ingredients:

(makes 18 pieces)

  • 1 cup of pitted Medjool dates

  • 1/2 cup sliced almonds

  • 1/2 cup old-fashioned oats

  • 1/4 cup almond butter

  • 2 tsp molasses

  • 2 tbsp maple syrup

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • sprinkle of nutmeg

  • sprinkle of cloves

  • 1/2 tsp salt

  • 1 1/2 tsp vanilla extract

  • 2 tbsp of chia seeds

  • 1 tbsp of flax seeds

  • 3 tbsp of mini white chocolate chips

  • Graham crackers


Directions:

  1. Make sure your Medjool dates are pitted, then add them to a large mixing bowl.

  2. Add all the remaining ingredients to the mixing bowl, except for the graham crackers and mini white chocolate chips.

  3. This is a little difficult to mix, so you might need to use your hands to smash the dates and get the batter evenly combined. It’s more about pressure than speed here. If you don’t want to use your hands (this is the way I would suggest), you can use a food processor (S-blade setting) or a really sturdy spatula. If you use a spatula, remember it’s more about folding than stirring.

  4. Once mixed, fold in the mini white chocolate chips.

  5. Place the graham crackers into a zip-top bag and, using a rolling pin or your hands, crush them until they reach a dry, sandy consistency.

  6. Pour the graham cracker crumbs onto a plate. Roll the dough into small balls. Once formed, roll each ball in the graham cracker crumbs so you have a graham cracker outer coating.
